Best Tomato Pasta Sauce Ever

This is a homemade version of Prego. It is SO GOOD.. SO SO SOOOO GOOD! If you are making spaghetti, you will want to double this recipe. This barely made 2 servings. Luckily, I made it for a pizza bagel so nobody was left starving at dinner.

RECIPE
Serving Size: 2

Ingredients:
4 cloves garlic
1 teaspoon kosher salt or sea salt
3 Tbsp olive oil
½ medium onion, diced
¾ cup chicken broth
6 large Roma tomatoes, cut in half
1 cup mushrooms, diced big
1 (6 ounce) can tomato paste
½ tsp fresh cracked black pepper
½ tsp red pepper flakes
1 tsp sugar
1 tsp dried parsley
½ tsp dried basil

Directions:
1. On your cutting board, chop and smash the garlic into a paste with the salt.
2. Heat a large saucepan or dutch oven with the oil over medium-high heat.
3. Add the onions and garlic to the pan and cook for about 8 minutes or until the onions are all brown.
4. Add the chicken broth to the pan and scrape the bottom to get all the”flavor” bits off of it.
5. Add the tomatoes and mushrooms.
6. Add the tomato paste and all of the seasonings except the parsley and basil. Stir to combine.
7. Bring to a soft boil and turn the heat to low. The tomatoes should have softened by now. Use a potato masher to smash the tomatoes. Afterwards, cover to pan with a lid.
8. Let it simmer for 1 to 1-½ hours, and stir occasionally.
9. Add the parsley and basil.
10. Serve over pasta, pizza, bagel.. Anything your heart desires. =)
