Ok, this is really starting to frustrate me. I’m trying to add more vegetables to our diet (and not just ‘salad’ and variations on cooked carrots), so I figured I’d get a vegetarian cookbook and that should give me some meals I can add in. Nope; every one I’ve found has heavily leaned on high-starch vegetables (thanks, I have no problem getting potatoes/root veggies into my diet), grains (ditto), and ‘meat replacement’ recipes that like to pretend they’re chicken or ground beef or whatever. (And the ones that don’t use tofu to its strength, but more a ‘tasteless meat-stand-in’, and that always irks me because tofu can be /delicious/.)
Anyway, that being said; anyone have a link/book/recipe for what I’m actually looking for? Because I’m not getting anywhere here. (Some bean recipes (that aren’t kidney beans or chili) would be lovely too.)
